

Spicy Chicken and Rice Bowls

Ingredients
- 1 bag Just Bare Roasted Spicy Bites
- 1/4 cup Soy Sauce
- 3 Tbsp. Honey
- 2 Tbsp. Brown Sugar
- 3 cloves Garlic, minced
- 1 tsp. Ginger, grated
- 1 Tbsp. Rice Vinegar
- 1 Tbsp. Sesame Oil
- 1 Tbsp. Cornstarch
- ¼ cup Water
For the Rice Bowls:
- 2 cups Cooked Cauliflower rice
- 1 cup Steamed Broccoli
- ½ cup Shredded Carrots
- ½ cup Cucumber Slices
- 1 Avocado, sliced
- Sesame Seeds & Green Onions: For garnish
Instructions
- In a small mixing bowl, whisk together soy sauce, honey, brown sugar, garlic, ginger, rice vinegar, sesame oil, cornstarch, and water.
- Add your chicken to a sauté pan with a little olive oil and sauté according to package instructions.
- Pour the sticky sauce mixture over the chicken. Simmer for 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken.
- Add the riced cauliflower into bowls. Add in the cooked broccoli, shredded carrots, cucumber slices, and avocado. Add the chicken on top and garnish with sesame seeds and green onions.
