Spicy Chicken and Rice Bowls

Ingredients

  • 1 bag Just Bare Roasted Spicy Bites
  • 1/4 cup Soy Sauce
  • 3 Tbsp. Honey
  • 2 Tbsp. Brown Sugar
  • 3 cloves Garlic, minced
  • 1 tsp. Ginger, grated
  • 1 Tbsp. Rice Vinegar
  • 1 Tbsp. Sesame Oil
  • 1 Tbsp. Cornstarch
  • ¼ cup Water

For the Rice Bowls:

  • 2 cups Cooked Cauliflower rice
  • 1 cup Steamed Broccoli
  • ½ cup Shredded Carrots
  • ½ cup Cucumber Slices
  • 1 Avocado, sliced
  • Sesame Seeds & Green Onions: For garnish

Instructions

  1. In a small mixing bowl, whisk together soy sauce, honey, brown sugar, garlic, ginger, rice vinegar, sesame oil, cornstarch, and water.
  2. Add your chicken to a sauté pan with a little olive oil and sauté according to package instructions.
  3. Pour the sticky sauce mixture over the chicken. Simmer for 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken.
  4. Add the riced cauliflower into bowls. Add in the cooked broccoli, shredded carrots, cucumber slices, and avocado. Add the chicken on top and garnish with sesame seeds and green onions.
