Weeknight Burrito Bowls

Ingredients

  • ½ bag Just Bare Oven Roasted Original Bites
  • 15 oz can black beans, drained and rinsed
  • 1/2 cup water
  • 1-1/2 cups cherry tomatoes, halved
  • 1-1/2 cups sweet corn kernels
  • 4 oz shredded Monterey Jack cheese
  • 1 small head romaine lettuce, chopped
  • 1 tbsp. chili powder
  • 2 tsp. garlic powder
  • 1-1/4 tsp. salt
  • 1/2 tsp. cumin
  • 1/2 tsp. onion powder
  • 1/4 tsp. dried oregano
  • 1/4 tsp. cayenne pepper
  • 1 bag instant cilantro-lime rice
  • ¼ cup guacamole

Instructions

  1. Mix the chili powder, garlic powder, salt, cumin, onion powder, dried oregano, and cayenne pepper in a small bowl.
  2. Add your chicken to a sauté pan with a little olive oil and sauté according to package instructions. Add half of the seasoning mix to the chicken.
  3. Add the black beans and water to a small sauce pan and the remaining seasoning. Bring it to a simmer until the beans are warm.
  4. Build your bowl by adding your rice, then topping with cooked chicken, black beans, cherry tomatoes, corn, cheese, lettuce, and quacamole.
