

Weeknight Burrito Bowls

Ingredients
- ½ bag Just Bare Oven Roasted Original Bites
- 15 oz can black beans, drained and rinsed
- 1/2 cup water
- 1-1/2 cups cherry tomatoes, halved
- 1-1/2 cups sweet corn kernels
- 4 oz shredded Monterey Jack cheese
- 1 small head romaine lettuce, chopped
- 1 tbsp. chili powder
- 2 tsp. garlic powder
- 1-1/4 tsp. salt
- 1/2 tsp. cumin
- 1/2 tsp. onion powder
- 1/4 tsp. dried oregano
- 1/4 tsp. cayenne pepper
- 1 bag instant cilantro-lime rice
- ¼ cup guacamole
Instructions
- Mix the chili powder, garlic powder, salt, cumin, onion powder, dried oregano, and cayenne pepper in a small bowl.
- Add your chicken to a sauté pan with a little olive oil and sauté according to package instructions. Add half of the seasoning mix to the chicken.
- Add the black beans and water to a small sauce pan and the remaining seasoning. Bring it to a simmer until the beans are warm.
- Build your bowl by adding your rice, then topping with cooked chicken, black beans, cherry tomatoes, corn, cheese, lettuce, and quacamole.
