

Quick Sheet Pan Chicken and Mixed Vegetables

Ingredients
- ½ bag Just Bare Oven Roasted Bites Original
- 1 red bell pepper cut into 1″ dice
- 1 medium zucchini cut into 1/4″ thick rounds
- 1 medium yellow squash cut into 1/4″ thick rounds
- ½ large sweet onion cut into 1″ dice
- ½ small eggplant cut into 1″ dicer
- 1 broccoli cut into bite-sized florets
- 6 ounces white mushrooms
- 2 tbsp. olive oil
- For Spice Mix:
- ¼ tsp. fresh ground black pepper
- ½ tsp. kosher salt
- ½ tsp. crushed fennel seed
- ⅛ tsp. crushed red pepper flakes
- ½ tsp. dried oregano
- 2 cloves garlic minced
Instructions
- Cut all of the vegetables and add them to a large mixing bowl. Then drizzle and coat with olive oil.
- Combine the black pepper, salt, fennel seed, red pepper flakes, dried oregano, and garlic. Sprinkle the seasoning mix over the vegetables until full coated.
- Using a non stick baking tray, add the seasoned vegetables and chicken to the tray evenly spreading out everything.
- Bake at 375°F for 15 minutes or until the vegetables become tender and chicken is fully cooked.
- Remove from tray and serve.
