Quick Sheet Pan Chicken and Mixed Vegetables

Ingredients

  • ½ bag Just Bare Oven Roasted Bites Original
  • 1 red bell pepper cut into 1″ dice
  • 1 medium zucchini cut into 1/4″ thick rounds
  • 1 medium yellow squash cut into 1/4″ thick rounds
  • ½ large sweet onion cut into 1″ dice
  • ½ small eggplant cut into 1″ dicer
  • 1 broccoli cut into bite-sized florets
  • 6 ounces white mushrooms
  • 2 tbsp. olive oil
  • For Spice Mix:
    • ¼ tsp. fresh ground black pepper
    • ½ tsp. kosher salt
    • ½ tsp. crushed fennel seed
    • ⅛ tsp. crushed red pepper flakes
    • ½ tsp. dried oregano
    • 2 cloves garlic minced

Instructions

  1. Cut all of the vegetables and add them to a large mixing bowl. Then drizzle and coat with olive oil.
  2. Combine the black pepper, salt, fennel seed, red pepper flakes, dried oregano, and garlic. Sprinkle the seasoning mix over the vegetables until full coated.
  3. Using a non stick baking tray, add the seasoned vegetables and chicken to the tray evenly spreading out everything.
  4. Bake at 375°F for 15 minutes or until the vegetables become tender and chicken is fully cooked.
  5. Remove from tray and serve.
