Homemade White Chicken Chili

Ingredients

  • 2 lbs Just Bare Boneless Skinless Chicken Breast 
  • 2 (15-oz) cans white beans drained and rinsed 
  • 2 cups low-sodium chicken broth 
  • 1 cup corn
  • ½ cup plain Greek yogurt 
  • 1 tablespoon olive oil 
  • 1 medium yellow onion, diced 
  • 3 garlic cloves, minced
  • 4 oz diced green peppers 
  • 1 tablespoon ground cumin 
  • 1 teaspoon dried oregano 
  • 1 teaspoon smoked paprika 
  • 1 teaspoons salt
  • ½ teaspoon cracked black pepper
  • 1 lime
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Chop onion, green peppers, and garlic then set aside.
  2. Add olive oil to pot and stir in onion with a pinch of salt until cooked. Then add garlic, green peppers, additional seasoning and stir.
  3. Pour in drained beans, corn, and chicken broth. Stir well and bring to a gentle simmer over medium heat. 
  4. Place chicken breasts into pot, cover and simmer for 18-22 minutes, or until fully cooked with an internal temperature of 165º.
  5. Remove chicken breasts and place onto a plate to shred. Return shredded chicken to pot.
  6.  Remove pot from heat and stir in Greek yogurt until smooth. Add a freshly squeezed lime and any additional seasoning.
  7. Ladel into bowls and top with a dollop of yogurt, green peppers, cheese, and cilantro.
