
Homemade White Chicken Chili

Ingredients
- 2 lbs Just Bare Boneless Skinless Chicken Breast
- 2 (15-oz) cans white beans drained and rinsed
- 2 cups low-sodium chicken broth
- 1 cup corn
- ½ cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 4 oz diced green peppers
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoons salt
- ½ teaspoon cracked black pepper
- 1 lime
- 1 tablespoon chopped fresh cilantro
Instructions
- Chop onion, green peppers, and garlic then set aside.
- Add olive oil to pot and stir in onion with a pinch of salt until cooked. Then add garlic, green peppers, additional seasoning and stir.
- Pour in drained beans, corn, and chicken broth. Stir well and bring to a gentle simmer over medium heat.
- Place chicken breasts into pot, cover and simmer for 18-22 minutes, or until fully cooked with an internal temperature of 165º.
- Remove chicken breasts and place onto a plate to shred. Return shredded chicken to pot.
- Remove pot from heat and stir in Greek yogurt until smooth. Add a freshly squeezed lime and any additional seasoning.
- Ladel into bowls and top with a dollop of yogurt, green peppers, cheese, and cilantro.
